Ingredients
2 large cooking apples, to make approx 250ml purée
175g plain flour
Pinch of salt
1⁄2 tsp bicarbonate of soda
1 tsp ground ginger
75g chopped walnuts
100g omega excellence coconut batter
150 g zylto sweet
2 eggs
Method
Peel, core and chop the cooking apples and heat slowly in a saucepan until they become mushy. Preheat the oven to 180°C. Line and grease a 7” cake tin. Mix together the coconut butter and ZyloSweet. Beat in the eggs. Stir in the apple purée. Sift the flour into the mix and add the salt, bicarbonate of soda, ginger and walnuts. Add the cake mix to the tin and cook for 30 minutes. After 30 minutes, lower the temperature to 160°C and cook for a further 35 minutes until golden brown.
